Notification of payout prices and quantities of cattle for slaughter

If you run a slaughterhouse that is subject to reporting requirements, you must report your prices for slaughter quantities in the relevant categories and trade classes to the responsible authority.

Detailed description

Market activity in the slaughter cattle sector is subject to strong fluctuations due to the constant change in supply and demand. There are also a large number of suppliers and buyers, which makes it very difficult to get an overview of the market. In order to ensure market transparency nonetheless, there is the instrument of official price quotations.

Based on the price reports submitted by the slaughterhouses subject to reporting, the competent authority determines the price ranges of the respective categories and trade classes for the previous week from Monday to Sunday. These are then published together with the average weighted payment price calculated for the respective trading class as an official price quotation.

If you are required to report, you must report for the previous week:

  • The total quantity slaughtered by number of pieces and slaughter weight and
  • the averages of the payout prices per kilogram weighed with the slaughter weights (this is the price to be paid to the supplier free entrance to the slaughterhouse without sales tax).

Prerequisites

The reporting obligation generally applies to carcasses of cattle, pigs and sheep.

Companies that are exempt from the reporting requirement are:

  • a maximum of 500 pigs or
  • a maximum of 150 cattle or
  • a maximum of 75 sheep
Butcher. The average weekly slaughter number is calculated based on the annual average quantity slaughtered in the previous calendar year.

Please note

On the basis of the reports received, the authority for the environment, climate, energy and agriculture prepares the "weekly report on the price determination of carcasses" and sends it to the Federal Agency for Agriculture and Food. The Federal Institute summarizes the reports received from the federal states and publishes the result on the Internet at www.bmelv-Statistik.de.

Deadlines

Deadlines must be adhered to. If you are required to report, please contact the responsible office. The responsible authority will inform you when your report is expected.

Procedure

  • If you are required to report, informally report the necessary prices and quantities to the responsible authority.
  • The competent authority forwards the information to the Federal Agency for Agriculture and Food.
  • The Federal Agency for Agriculture and Food carries out an evaluation and publishes a nationwide, anonymous list.
